Lindsay began his career over 10 years ago in Scotland, before coming back home to the North East to continue his development. Since moving to Newcastle, he has worked in some of the region's finest kitchens and the city's only Michelin star at the time - House of Tides.
Beginning his career at Paul Rankins Michelin star restaurant in Belfast, Mike honed his skills and has since returned to head up some of the region's best restaurant kitchens.
Sommelier - ROSIE OSWIN
Rosie began her career at Peace & Loaf whilst completing her BA and MA degrees. Having always had a keen passion for wine, she left the advertising sector behind in 2022 to pursue her career as a sommelier.
She has completed her WSET Level 3, and was a finalist in the Gosset Matchmakers 2023 competition.
Restaurant Manager - RICHARD LITTLE
Richard studied Scriptwriting in the North East, before moving to Helmsley to work at the revered Feversham Arms Hotel & Spa.
Having just returned to Newcastle, he now oversees the front of house team.
