Lindsay Rushton

Chef Patron

Lindsay's culinary journey began at just 19 years old at the 5 star Old Course Hotel, based in St Andrews, Scotland. This is where his passion for hospitality and fine dining first took shape. He went on to hone his skills at the three AA Rosette Jesmond Dene House, before gaining further experience at Branches, the Michelin-Starred House of Tides and finally Hibou Blanc. This Journey ignited the flame for his next chapter. Lindsay was keen to challenge the perception of fine dining and proving that incredible food doesn't need to be formal - just honest, exciting and accessible. Rebel Was Born.

Michael Caul

Chef

Growing up in Wallsend,  Michaels always had a strong connection to the local area - and an even stronger passion for food, whether thats trying new dishes or experimenting in the kitchen. After spending the last year and a half with Hide and Nest dining on Chillingham Road, he has developed a solid foundation in hospitality, with his skills and passion only growing stronger - as does his love for Newcastle United and Guinness.

Jack Jennings

Apprentice

Jack joined the team as an apprentice in early 2025, bringing fresh energy, a willingness to learn and absolutely no fear of getting stuck in.  Jack proves hard work and attitude go a long way in this industry as well as a boat load of wit and cheek to keep Lindsay on his toes.  Since day one, Jack has developed immense skills and confidence within the fine dining scene.

Rhyanne Popple

Sommelier

Born in North Lincolnshire, Rhyanne began her journey at just 13 years old as a pot wash for Michelin starred Winteringham Fields - proving early on she wasn't afraid of a bit of hard graft. Over 5 years, she worked her way through the ranks, swapping the sink for the cellar and developing a serious passion for wine, becoming junior Sommelier at just 17 years old.

At 18, Rhyanne found her way to Newcastle, where she worked at Michelin Starred House of Tides for 5 years. Starting as Junior sommelier, working all the way up to Restaurant Manager.  Rhyanne joined Rebel in 2025, brining her ever growing wine expertise and a strict belief in finesse.

Jay Hawman

Manager

A born and bred Geordie man. Jay started his journey in the pubs of Fenham before moving away from Newcastle to study. Jay spent many years travelling around the cities of the UK whilst working for Gaucho and Marco Pierre White, gaining a very diverse and impressive management style within these roles. Jay really found his passion after becoming General Manager of Restaurant STOW in Manchester. Jay has done his rounds, but like any true Geordie man, he's found his way back home. He brings a wealth of experience and a sharp eye to Rebel, but most importantly the right amount of northern charm.
